1 cup whole wheat flour 250ml
1 cup quick cooking or regular rolled oats 250ml
1/3 cup flax meal (optional) 125ml
1tsp ground cinnamon 5ml
1/2tsp. baking soda 2ml
3/4 cup brown sugar 175ml
½ cup butter 125ml
1 egg 1
1 tsp. vanilla 5ml
1 cup grated carrots 5ml
1 1/4 cup raisins or other chopped dried fruit
1 1/4cup chocolate chips
1. Combine flour, oats, flax meal, cinnamon and soda in a medium bowl.
2. In large bowl beat butter, sugar, egg and vanilla until smooth.
3. Stir in flour mixture, carrots, raisins and chocolate chips until blended.
